The Shishito pepper is small and finger-long, slender, and thin-walled. Although it turns from green to red upon ripening, it is usually harvested while still green. About one out of every ten peppers is spicy. Mild, mild, mild… hot! The hit of heat and suspense is addictive.

Heat sesame oil in a heavy skillet over medium-high heat.
Add the peppers and cook, occasionally turning, until they begin to blister on all sides.
Sprinkle with a bit of brown sugar, sake, and soy sauce.
They are ready to enjoy!
